Get your griddle or flat top going. Let it get nice and hot before adding the butter. While it is heating up, make the egg mixture.
I typically do not use very much if any milk. The ratio is one egg per slice of bread, but today I used 5 slices of Sourdough bread, which is a little firmer in texture, so I used 4 eggs and a splash of milk. Add 1 Teaspoon of vanilla & 10 seconds of grated nutmeg.
Whisk and soak the bread. Butter the pan, cook! If you are generous with the butter when cooking, you do not need to add any to the finished toast. To expedite the process for hurried children, I cut up the French Toast, then sprinkle liberally with powdered sugar, then squeeze fresh lemon juice. Today I topped with fresh blueberries and should have added some lemon zest. Next time…I mean tomorrow!
